Turbans.
Of course that they also wore helmets.Although today most people associate wearing of turbans with Arabs or Indians,it was usuall to wore turban in eastern part of the empire,especially among soldiers if they cannot afford metal helmets.Turbans were worn in Byzantium(and Persia)even before arabs founded their Caliphate and before Islam.It was more question of weather in that regions than culture or religion.Also crusaders adopted this very quickly.

That's hilarious. Love it. Just remember though, they called themselves "Romans" or "Romani" using their parlance. Very cool. I wish I had thought of it.
